A British heritage breed, our Wessex Saddleback pigs have free range at Bellbird Spring vineyard.
Our small breeding stock – Blackie, Pigwig, and Sam the boar - are free to root, graze and wallow on our property, and their diets are supplemented with peas and crushed wheat from local Canterbury farms.
Known for their exceptional bacon and ham, the lovely slow-growing piglets from our stock take about nine months to achieve the right weight for processing, a world away from intensive and indoor factory farmed breeds.
At about 80kg live weight, the pigs offer 55-60kg of meat. Depending on availability, we offer Wessex Saddleback pork to boutique restaurants and private customers. Pork is delivered in primals for our customers to choose their preferred processing options, such as curing, salami, or sausages. Portioned meat may also be available.
