WINEMAKING NOTES
Pinot noir clones, 114, 115, 667, UCD5 and Abel. Fully destemmed, indigenous yeast ferments, hand plunged with some pump over, cuvaison 30 to 40 days, and aged in old and new oak casks for up to 12 months. Bellbird Spring vineyard practises are in compliance with the organic standards of BioGro New Zealand.
