WINEMAKING NOTES
Pinot noir clones 114, and Clone 5. 90% destemmed, indigenous yeast ferments, hand plunged with some pump over, cuvaison 32 days, and aged in old and new oak casks for up to 12 months.
Fruit was grown on our elevated Pahau clay vineyard in Waipara.
